Ceviche

There is nothing more tasty than a fresh fish ceviche!  Ceviche can be made with a variety of fish and vegetables.  Here is a classic ceviche recipe using mahi mahi fish.  This is perfect for an appetizer or an hors d-hourve for a family get-together.

Ingredients:

1 large yellow onion diced
1 tb Tabasco
1/2 bunch fresh cilantro chopped
1 lb Mahi Mahi diced, raw
2 tb Kosher salt
3 tomatoes diced
1/2 c fresh lime juice
1/2 c fresh lemon Juice

Avocado (optional: add on top as desired)

Preparation:

Mix all the ingredients and allow to marinate at least 1 hr. Drain off excess juice and enjoy with tortilla chips or tortillas.  Remember, it is only good for three days at the most! Discard after that time.
